This was the theme of this week's Recipe card challenge on Julie's recipe card challenge blog. I'm really not the elegant dinner party kind of gal so this was a challenge for me. Both in the recipe and in the creation of the card. But this is supposed to be about making it a challenge, right?
This is a delicous recipe that I had at a friend's party. It makes a great meal of it's own. Just have some fruit, breadstick and/or salad and you're set! This would be great for an elegant ladies luncheon! Here is the recipe:
D’Amico Chicken Salad
1 box Rotini pasta - cook according to package
2 cups cooked and diced chicken or turkey
1 cup dried cherries
6 chopped green onions
4 diced celery stalks
1 cup whole toasted almonds
Combine above ingredients together
Dressing:
1/4 cup powdered sugar
2 TBSP white wine vinegar
Combine sugar and vinegar, mix thouroughly
Whisk in 2 cups real mayonaise
2 TBSP cold water
2 TBSP poppy seeds
2 teasp. salt
1/2 teasp black pepper
Pour over pasta.
